At the end of the 1960s was purchased by the Savencia Corporation and developed the Etorki brand based on local traditions. Savencia Corporation (formerly Bongrain), is a French international corporation for the production of cheeses and dairy products. Savencia’s philosophy is to preserve the factory’s originality. It distributes its products across France and around the world. It specializes in manufacturing unique cheeses following the traditions and climate where they originated. The factory is rated No. 1 in Europe and No. 5 in the world, in its category.
About the product
Sheep’s milk carries all the aroma and unique flavors found in Basque cheeses. Etorki has strong pungent taste. Its texture is flexible with a buttery taste that melts in the palate. The meaning of the word Etorki in the Basque dialect means ‘origins’.
When served
It is recommended to serve Etorki with sour black cherry fruit spread or with sour and sweet fruit like pears, apples and grapes. It goes well with almost every dish but its strong and dominant taste should be taken into account. It goes well with old and ‘heavy’ red wines, like cabernet sauvignon or Syrah.
