The manufacturing and aging of Comte AOP cheese requires special expertise. These qualities ensure a stringent aging process developed by the Seignemartin family over generations.

Hard Comte cheese is a protected brand. Preserving the rules of the brand ensures the high quality of the cheese year after year. This cheese is made only in this area on the outskirts of the French Jura Mountains called Franche Comte. It comes from the milk of Montblliarde cows, which graze freely and eat the local plants that grow in the Jura Mountains. The result is a cheese with a unique taste and aroma appreciated all over the world.
