About the manufacturer

The Lincet dairy is a family business established in 1895, located in Aube in northeastern France, near Champagne. The dairy plant makes a small range of special cheeses loyal to the local terroir and representative of this geographic area. The cheeses are marketed all across France, Europe and the US.

 

About the product

The cheese is named after the village of Chaource. It exists since the 14th century but only in the 18th century its production for consumption in the environs of the village has begun. Its production is unique. Milk is collected from local farms, is slowly fermented in lactic cultures giving the cheese a pronounced flavor of fresh milk and cream. In 1996 it won the coveted PDO protected product standard.

 

When served

It is best to eat this cheese on its own, or on bread with no butter. This way you’ll enjoy its delicate flavors. It is best accompanied by cabernet sauvignon wine but will also go very well with aged Chardonnay.
