About the manufacturer
Merci Chef is a brand manufactured by the Eurial Corporation, founded in 1895 in the Loire
Valley. The corporation has evolved constantly and is today the largest goat cheese
manufacturer in all of Europe. A 2013 survey found that 44% of French homes consume Eurial
goat cheeses. The corporation has factories in many regions, usually where goat milk production
is highly developed. Recently Eurial has started manufacturing products made from cow’s milk, including butter, in Normandie.
Dry butter is an essential ingredient in baking – and was developed specifically for bakers. It is ideal for creating puff pastries and especially the flakey dough needed to make croissants and other pastries that require folding of the dough.
It is called dry because it has 2% lower water content than regular butter and has a higher milk solids percentage. This makes the butter more flexible and more importantly, gives it a higher melting threshold. These facts are crucial when flaky dough is folded. Manufacturing dry butter is based on the milk produced by cows in the summer, when it is richest. This, in addition to its unusual technological capability, enables Eurial to give us this unique and excellent product.
When served
This butter is made especially for the baking industry. In France it is used to make the world-renowned butter croissants. All sweet and salty dishes calling for folded puffy dough are manufactured based on dry butter. Its unique qualities make it the ideal butter for manufacturing a range of products: flaky dough, yeast cakes and choux pastries.
