EMI is one of the largest companies in Switzerland and in Europe for the production of cheese. The company includes the dairy production of farmer unions in the Swiss Alps. The cows graze in fields with high quality grass and the quality of the milk they produce is directly expressed in the qualities of gruyere cheese.
About the product
Gruyere cheese comes from the village of Gruyere in west Switzerland, north of the lake of Geneva. In 2001 the cheese received the PDO protected brand standard. It is mildly salty and has a typical nutty flavor. Young gruyere has slight sweetness and as it ages it acquires deeper, more pungent flavors. Gruyere is known for having the best qualities for baking and cooking. Its delicate taste leaves its mark on a cooked dish but does not dominate it.
When served
Gruyere is the basis of Swiss fondu. It is ideal for toasts, quiches, baking and onion soup. It will be a guest of honor in any cheese tray. It goes well with fruit like grapes and ripe pears, dry white wine, red wine or dark beer.
