Ingredients:
1 egg
1/3 cup sugar
50 grams butter, melted
½ cup orange juice (fresh or bottled)
1 teaspoon vanilla extract
1 cup self-raising flour
½ cup almond powder
¼ teaspoon baking soda
Powdered sugar
Filling:
St. Dalfour berry fruit spread
Preparation:
Preheat oven to 180 degrees Celsius and grease a muffin tin.
Mix the egg with the sugar. Add melted butter, orange juice, vanilla extract and mix. Add the flour, almonds, and soda and mix gently until all ingredients are blended (do not overmix).
Pour the mixture into the muffin tin, but not more than 2/3rds full. Place a ½ teaspoon of fruit spread on each muffin and gently push it into the batter with a spoon. (There is no need for the mixture to completely cover the fruit spread since it sinks during baking anyway).
Bake for 15-20 minutes, until a toothpick stuck in a muffin comes out dry.
Take out of the oven, let the muffins cool, and carefully remove from the pan. Sprinkle with powdered sugar and serve with St Dalfour delice.
