Chaumes is a special cheese that ripens slowly, like ears of wheat. Under the golden crust is a cheese of soft texture, rich in flavor and of pungent aroma. The golden-orange crust is created during the aging process in which the cheese is washed in salt water and bacteria cultures once every few days, to preserve it and reach its special taste<\/p>\n
When served<\/p>\n
