Vinegar can add depth of flavor to every salad dressing. It can be sizzled over fruit salads, chicken, grilled vegetables, fish and more. Here’s a trick: Pour the contents of the bottle in a pot, add 100 grams of brown sugar and cook on low heat until the remaining liquid is half the original amount. You will receive a balsamic syrup very much like 12-year aged traditional vinegar. Can be sizzled on ice cream, fruit salad, cheesecakes, or smeared on steak and chicken before cooking.

Acetum is a factory specializing in manufacturing balsamic vinegar. It was founded in the beginning of the 20th century in Modena, in northern Italy. The factory manufactures balsamic vinegar according to an ancient recipe which is protected by the DOP standard. Real balsamic vinegar is called traditional balsamic vinegar and must be aged for a minimum of 12 years. The other types are regular balsamic vinegars and do not have the qualities and depth of flavors of the traditional kind. Among the products of Acetum one can find also balsamic vinegars aged for 18 or 25 years. These can cost up to hundreds of dollars for a bottle of 100 cc. Modena is a town in the region of Emilia-Romagna in northern Italy, where balsamic vinegar was born hundreds of years ago. Most of the balsamic vinegar produced in the world comes from factories in this area.
