Caprinelle is a goat cheese manufactured by Les Fromageries Occitaines, a small regional corporation specializing in producing terroir cheeses by local shepherds, based on the traditions of the Pyrenees. Located in the slopes of the central Pyrenees on the border of Spain up to the area of Roquefort and Auvergne to its north. This is where the finest goat and sheep cheeses were born, as well as the famous Roquefort cheese. Caprinelle, Etchola and Roquefort, among others.

This cheese is made from 100% Pyrenean goats’ milk. These feed in natural pastures almost all year long and produce rich milk with the natural flavors and aromas of mountain flowers. The method of producing tomme cheese is ancient and was born in shepherd huts. Caprinelle is an ideal example of this method of manufacturing. Its taste is rich with the aroma and roasted nuts.
One bite of Caprinelle is enough to demonstrate the unique rainbow of flavors that characterizes this mountain tomme cheese: Caramel with roasted nuts and a typical sour ending. In the home kitchen it is used in many dishes: from a cheese fondue to pasta pastries with Caprinelle as the only addition. Quiches based on Caprinelle will be beloved by all and a frittata with potatoes and Caprinelle is an excellent breakfast. This cheese goes well with cold white wine.
